Mac & Cheese

Mac and cheese. Simple, humble, and unpretentious. But when done right, it's a thing of beauty. A dish that can take you back to your childhood, or transport you to a place of comfort and indulgence. So how do you make the perfect mac and cheese? Here's what you need to know.

First off, let's talk pasta. I'm not one for fussy shapes or artisanal varieties. Give me elbow macaroni any day of the week. Cook it until it's al dente, then drain it and set it aside. Simple, right?

Now, the sauce. This is where things get interesting. Melt some butter in a saucepan, then add flour and whisk until it's smooth. Cook it until it's golden brown, then pour in some milk and whisk until it's thickened. And now, the pièce de résistance: the cheese.

Cheddar is the classic choice, but I like to mix things up. Gruyere, parmesan, even blue cheese if you're feeling adventurous. Whisk it all together until it's smooth and creamy, then add a dash of dry mustard, a pinch of cayenne, and some salt and pepper to taste.

Now, this is where some folks might call it a day. But not us, my friends. We're going to take it to the next level. We're going to make a breadcrumb topping. Panko breadcrumbs, to be exact. Mix them with some melted butter, sprinkle them over the top of the mac and cheese, and bake it in the oven until it's golden brown and crispy.
